Chicken 'n Dressing

Easy, throw together meal for busy nights. You could also put this together the night before or in the morning....
Ingredients
  • Base
  • About 1- 1½ pounds of chicken, cooked and diced. I use 3 average to large breasts or a mix of breast and thigh meat. Use more or less as you wish.
  • 1 can condensed cream of mushroom soup - I typically use low sodium or healthy request
  • 1 cup sour cream, light or fat free will work fine.
  • Stuffing top
  • 2 boxes chicken or herb flavor stuffing mix
  • ¼ cup butter
  • 3½ c. water (the idea here is to use half the butter and make up for it with water. You'll never taste the difference)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prepare stuffing as directed on package, but use the butter/water quantities as shown above, cover and set aside.
  3. In a 9 X 13 pan, mix the cubed cooked chicken with the sour cream and cream of mushroom soup. Spread evenly over the bottom of the pan. Spoon the stuffing loosely and evenly over the top. Bake at 350 degrees for about 35-40 minutes until heated through and sides are bubbling.
  4. Serve with a green salad and/or vegetables. (and cheese?)
