Double Tomato Relish

- ¾ cup finely chopped fresh roma tomatoes
- ¾ cup finely chopped sun-dried tomatoes (not oil packed)
- ½ finely chopped red onion
- ½ cup chopped fresh italian flat-leaf parsley
- 2 Tablespoons extra-virgin olive oil
- salt and pepper to taste
- Toss all ingredients together in a small-medium bowl.
- Makes 2 cups
