Apple Raisin Oatmeal Cookies

Ingredients
  • 1 cup (2 sticks) unsalted butter , softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2½ cup oats, old fashioned or quick cooking
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2½ teaspoons ground cinnamon
  • 1½ cups coarsely chopped walnuts
  • 2 cups tart apple, peeled, diced small
  • 1 cup raisins
  • 1 teaspoon fresh lemon juice
Instructions
  1. Toss the apple pieces with lemon juice. Set aside. Put raisins in a saucepan with ½ cup water and bring to a boil. Cover and remove from heat. Set aside.
  2. Beat the sugar and butter until fluffy, about 1 minute. Add eggs and vanilla, beating for about a minute.
  3. Whisk together the oats, flour, baking powder, baking soda, cinnamon and salt. Add to the butter and egg mixture slowly beating on low speed until just incorporated. Stir in the walnuts, raisins and apple chunks last.
  4. Bake at 350 degrees F for 12 to 15 minutes or until they’ve reached your desired doneness. I baked one batch for 18 minutes and they were still moist and chewy. The apples add quite a bit of moisture. Allow to cool on the cookie sheet for a few minutes before transferring to a wire rack to cool completely.
