Yeah, good luck eating just one of these.  Just the right mixture of butter and brown sugar, along with a good vanilla, then a blend of milk chocolate and dark chocolate chunks and crunchy pecans.  Bliss!  A classic for Christmas, or any day of the year.

AND, I tested these for you guys.  Repeatedly.  Wasn’t that good of me?   I wanted to make sure they had the flexibility I was after, so I could make them ahead, then bake them whenever I want.  Yeah….. I’m not sure if that’s good or bad.  You don’t need a microwave, although you could use one.  You just wouldn’t get that brown crunchy edge to go along with that chewy center.

Struggling again, to keep up with The Gunker (husband) and his lunch stuff.  So this week, I knew the freezer was almost on empty for lunch baked goods,  and was going to make the old apple coffee cake standby.  But I got a wild hair or two and changed up a few things and, ohyouhavetotrythisstuff!!!!

I went to the supermarket for my usual grocery trek, and they had fresh red raspberries, by the half pint, 2 for $1.  Couldn’t pass that up, could I?  Of course not!  Buy now, decide what to do with them later….sounds like a good plan to me!

Did someone say bacon?????  Eyes, noses, ears, everything and almost everyone perks up!   Whether it’s for breakfast, snack, BLT, on a salad or on a doughnut, most people love bacon.  And those of you who don’t or can’t eat it…..I’m truly, deeply sorry.

To me, the only “bad” thing about it is standing there cooking it.  I mean, if you’re gonna get that perfect chewy crunchy texture, you have to stand there, with the fire not too high, turning it and babysitting it, right?   Waiting for it to POP and splatter burn you.

We don’t see as much of our kids lately, everyone being busy with jobs, kids, etc.  Our daughter and her brood got a chance to swing by this past weekend, Sunday morning, and they all like waffles.  I hadn’t had a chance for her to try these yet, so I whipped a batch together Saturday night.  As always, with this recipe, they were a huge hit.  I wish I would have gotten a chance to snap that picture of Emma, with that huge smile on her face and whipped cream on the corner of her lips.  So cute!

I’ve made and eaten a number of versions of cobbler,  This one is by far the best I’ve had, or made.

Cobbler has never been very high on my list of desserts.  I’ve just never cared for the biscuit and fruit thing.  I’ve made a few that were still pretty good in my book, like the mixed berry cobbler I made back in the summer.  But the topping was still more bisuit’y than I care for.

I have had a love affair with ranch dressing since I first tasted it as a kid.  It seems like most people I know eat french dressing, which I think is disgusting.  Too sweet.  My husband loves the stuff.  People putting that stuff on taco salad never ceases to amaze me.  There is nothing taco or mexican about it.  But, I digress.

Over the years, ranch dressing has evolved into thick, gloppy, almost tasteless goop that is high in calories and low on flavor.    What happened to the buttermilk, the herbs, the pepper, the lemon juice?

Easy Chicken Noodle Soup

It just keeps getting colder, and flu season is right there with it.  I just got over a bout of it, so I should be good for another five years.  This soup sure tastes good when you’re down, though (or when you’re not!).  And it is really easy.  No, its not that whole slow cooked chicken making its own stock, but it’s quick, easy, and delicious.

I use a chicken breast, but with the way they sell chicken anymore, you could use thighs or whatever (if you’re wierd like my husband and don’t like white meat).  🙂  I also use unsalted or low salt boxed chicken stock.  If you have access to Trader Joe’s, they have awesome stock for a great price.  A little carrot, celery and onion, some good store bought egg noodles (I like the amish home-made style) and you are about there.   You can use more or less of anything here.  I like lots of celery, but some people don’t care for it.  Use less of it or leave it out.  You could use parsley instead of cilantro, but really, it doesn’t have that bright finish.

APARTMENT LIVING is a whole new concept for me.  I have never lived in one until now.  It’s different, but not bad.  I work away from home, so I stay there typically 3 nights per week.  This place is pretty small, consisting of four buildings, with eight apartments per building.  Interesting characters.  There is a guy down the hall, part of a very nice couple, who sits on the porch most nights.  It’s always fun to stop and talk with him awhile.  You want to know what’s going on around the rest of the place?  Ask Al.  Of course, he always has his own spin on things.  He likes to work up the other tenants by telling them little white lies.  Like the owners are having a Halloween party, with full costumes.  Or that they are giving out turkeys for Thanksgiving.  Then he sits back and watches the results.  Then there is the guy who, the first time I saw him, was taking his trash to the dumpster, and yelling obscene names at an unseen person or persons.  I found out later he was still yelling at the DNR officers, who had left several hours before, because they made him turn over the wild fawn he had been raising IN HIS APARTMENT.  It’s pretty interesting sometimes.

So I have found myself trying new recipes while trying to keep them small, just enough for me.  This was one I tried because I was having a sugar craving that wouldn’t go away until I fed it.  The first time I made this, It was quite a bit more intense, and would make an excellent mousse layer for a cake or something.  I’m still working on that one, as well as some variations on this theme.   So I made it two more times before I felt like I had something that was still good Nutella flavor, without being quite so rich and heavy.  This one works REALLY well.  Make it for one and take the leftovers in your lunch, it’s just as good the next day!  You can easily add more or less of any of the ingredients to suit your own tastes.  My husband spooned up some of this with his vanilla ice cream and LOVED it that way. Okay, like it or not, Fall has fallen and, in some areas, is already on its way out.  What that means to me is APPLES.   We have several apple trees, two of which are Northern Spy.  The other one?  Not sure.  It was tagged as a Northern Spy when I bought it, but that is NOT what it is.  The apples are quite good, but they don’t keep as well as spies.   I will be getting into a few more apple recipes in the near future, but this was one I had not tried, and I thought it sounded delicious.  Guess what?  It’s delicious.  Especially with a good fresh tart apple, like a Northern Spy.

Unfortunately, we have been so busy lately, I lost a load of tomatoes because they froze before we got a chance to go out and strip the vines.  The apples were on their way to that, so we finally got out there yesterday and stripped the trees.  I’m not real sure when I am going to find time to take care of them, but i made sure I had time to make a batch of this yesterday.  And was very glad I did.  It really didn’t take long.
